Pseudograins are great way to add healthy carbs to your breakfast to help fuel you until your next meal. If you have time to meal prep you can cook up a big batch of quinoa to last you the week. Add in some sautéed spinach, kale or roasted cherry tomatoes for extra fiber. Or for an even easier meal prep you can find my favorite healthy breakfast hack frozen quinoa blend.I use the O Organics brand that you can find at any Safeway store. Path of Life brand also has several quinoa blends to choose from. Many already have yummy greens and extra grains like brown rice added in. You can top your quinoa blend with goat cheese to add some protein to your morning or if you have a little extra time you can do my favorite and fry an egg using light olive oil spray and kick it up with a few avocado slices.
